CHOCOLATE & CHAM PANCAKES (VEGAN & GLUTEN FREE)

We love pancake day.

Whoever dreamt up a day devoted to Pancakes is a genius and in celebration we’ve created the yummiest, chammiest Pancakes to honour the day!

Ingredients:

Pancakes:

  • 150g Oats (ground into a flour, or just use oat flour!)

  • 1 mushed Banana

  • 2 tbsp Nut Butter

  • 2 tbsp Maple Syrup

  • 150ml Coconut Milk

  • 40g Ground Almonds

  • Pinch Vanilla Powder

  • Pinch Bicarbonate of Soda (optional)

Chocolate hot sauce:

  • 50g Creamed Coconut

  • 1 tbsp Cacao Powder

  • 2 tbsp Nut Butter

  • 2 tbsp Maple Syrup

  • 150ml Coconut Milk

& of course a jar of your favourite flavour CHAM!

Method:

  1. Combine the ground oats, mushed banana, nut butter, maple syrup, coconut milk, ground almonds and vanilla powder (plus bicarbonate of soda if using!). Tip: We usually just blend this up in the Nutribullet!

  2. Start making your chocolate sauce by combining all the ingredients in a pan on a low heat.

  3. Melt a little coconut oil in a frying pan and once hot add your pancake batter. Once the edges start to look cooked, it’s time to get flipping!

  4. Once you’ve cooked up a batch of pancakes, and the sauce ingredients have combined (and are nice and hot), layer your pancakes up: Pancake + Chocolate Sauce + CHAM *repeat*

Feel free to use your nut butter of choice & swap the coconut milk for your plant based milk preference.
