WEEKEND BRUNCH PANCAKES

Since starting CHAM, it’s rare I get a weekend to myself! Luckily I LOVE what I do, but I would be lying if I didn’t admit a free weekend feels like bliss these days. To celebrate, I love to put together a yummy brunch (after a cheeky lie in, or maybe a class if I’m feeling virtuous..). One of my favourite recipes to make? Pancakes of course! Because what says ‘weekend brunch’ quite like a stack of hot steaming pancakes 😍

Confession? Whilst I love a delicious brunch, I don’t want to put too much effort in (it’s meant to be my weekend off after all!) so these pancakes are super easy to make & best covered in CHAM!

CHAM Pancakes

Ingredients:

100g buckwheat flour

100g oat flour

300ml planet based milk

1 tbsp maple syrup

1 tsp vanilla

1 tbsp chia seeds

1 tsp baking powder

Coconut oil to fry

Method:

  1. Combine all the ingredients in a bowl or pouring jug (tip: using a jug makes it easier to pour straight into the pan!). Leave the mixture to one side for 5-10 minutes, whilst the chia seeds expand.

  2. Heat a little coconut oil in a fry pan. Pour a small amount of the pancake mixture and allow to cook, until small bubbles form around the outside edge of the pancake.

  3. Flip! Cook the other side.

  4. Serve up- we love ours smothered in CHAM, but you can also add nut butters, fresh fruit, coconut yogurt and cacao nibs!
